After 7 to 10 years of growth in the highlands of Jalisco, our jimadores hand-select each blue agave piña at peak maturity — a skill passed down through generations.
The piñas are slow-roasted in traditional stone ovens for 36 hours, unlocking the deep, complex sugars that define Aplomo's character.
